Easy Peasy Carrot Dip

Has your healthy eating gone side-ways over the festive or CNY Season? I always suggest to clients to make/take a healthy dip with veggie sticks for social gatherings.

This carrot dip is always a winner as its delicious and very fast to whip up (kids love it too!) 

Ingredients:

  • 3 x Large carrots, steamed and cooled
  • 1 garlic clove (optional)
  • 2 Tbsp cold pressed extra virgin olive oil
  • 1 Heaped tsp ground cumin
  • 1 Tbsp apple cider vinegar or coconut vinegar (I love coconut vinegar!)
  • 1 Teaspoon maple syrup or honey
  • Juice ½ lemon
  • Salt and black pepper to taste

Method:

Blend all ingredients in food processor until combined.
