Has your healthy eating gone side-ways over the festive or CNY Season? I always suggest to clients to make/take a healthy dip with veggie sticks for social gatherings.
This carrot dip is always a winner as its delicious and very fast to whip up (kids love it too!)
- 3 x Large carrots, steamed and cooled
- 1 garlic clove (optional)
- 2 Tbsp cold pressed extra virgin olive oil
- 1 Heaped tsp ground cumin
- 1 Tbsp apple cider vinegar or coconut vinegar (I love coconut vinegar!)
- 1 Teaspoon maple syrup or honey
- Juice ½ lemon
- Salt and black pepper to taste
Blend all ingredients in food processor until combined.
