Dairy is becoming increasingly problematic for people given the rise in its’ processing and gut health issues likewise.
You will never miss dairy with this heavenly “no-ghurt”. It is wonderfully nourishing. Strawberries are high in vitamin C, fibre and antioxidants. This recipe is also a wonderful source of good fats from cashews and coconut oil, with a just a little sweetness from dates. You will love it!
- 1/3 Cup Cashews (soaked 1 hour to soften)
- 1 Tablespoons lime juice
- 300g Organic strawberries (ensure organic otherwise they are highly sprayed; or you can also use 300g blueberries or mango flesh)
- 1.5 Tablespoons coconut oil
- 1-2 Soft pitted organic dates
Combine all ingredients in a high speed blender until smooth and creamy.
Pour into a glass jar and keep in fridge until ready to serve.
