Super Yum Strawberry Yoghurt (dairy free)

Dairy is becoming increasingly problematic for people given the rise in its’ processing and gut health issues likewise.

You will never miss dairy with this heavenly “no-ghurt”. It is wonderfully nourishing. Strawberries are high in vitamin C, fibre and antioxidants. This recipe is also a wonderful source of good fats from cashews and coconut oil, with a just a little sweetness from dates. You will love it!

Ingredients:

  • 1/3 Cup Cashews (soaked 1 hour to soften)
  • 1 Tablespoons lime juice
  • 300g Organic strawberries (ensure organic otherwise they are highly sprayed; or you can also use 300g blueberries or mango flesh)
  • 1.5 Tablespoons coconut oil
  • 1-2 Soft pitted organic dates

Method:

Combine all ingredients in a high speed blender until smooth and creamy.

Pour into a glass jar and keep in fridge until ready to serve.
